Why is the virgin birth only mentioned in two gospels?

The New Testament books are about convincing people that Jesus is God and/or son of God so wouldn't something as miraculous as a virgin birth be mentioned in every gospel and be noted in the letters from Paul? Because form what I read it seems that Paul didn't even know about the virgin birth.
