How can I make instrumentals of songs without backing vocals using the original track?

The simple answer is "you can't" for most songs made after the mid-70's. There is a trick that works on older records because of the predictable way things were panned. You simply inverted the phase of one channel. You can reduce the vocals but hard to remove completely because they typically share some frequencies with what you are trying to keep.
